So could you help clarify how the stats function in game because this is what I understand and I don't want to build a character and find I failed to understand.
Strength: Damage dealt, maybe even hit chance with melee (like in D&D)
Stamina: How long one can keep fighting, potentially even effects skill use (Kei regeneration/ ability to gather Kei quickly for rapid skill use)
Defense: How well you can take damage, basically a fusion of Hit Points and Damage Reduction
Speed/Agility: How fast/ good at dodging a character is.
Accuracy: Odds of striking with a ranged attack and how good one is at "targeting" a strike (aiming to slash eyes/ cut off a limb) basically Critical Confirmation and ranged attack effectiveness
Kei: how much Kei one has, which determines the amount of skills one could use and the max level of Kei available

Also do our physical stats level in any way? and is there a stat cap/ minimum for when we start?

Yes, I'll get into that later though. All what you said is correct though kei also functions as special attack or commonly known as 'magic'. Stamina determines kei reserves, kei determines proficieny/potency. I wouldn't advise investing more than 15 points into any one stat when you're making your character.
